Our Sushi Recipe

We promised you the delicious sushi recipe that we demonstrated at the St Ives Food Festival on Sunday so here it is:

Selection of Sushi

Sushi School. The induction to rolling various styles of Authentic Sushi. Using local day boat fish and traditional ingredients.

Basic Sushi Recipe

Japanese Sushi Rice
Mirin
Japanese Rice Wine Vinegar
Dried Layer Bread (Seafood)
Pickled Ginger
Wasabi Paste
Various Fish Types
Various Vegetable
Soy Sauce

Method

Wash rice 3 times until water is clear. Add the same amount of water as rice and cook for 12 minutes and rest of 12 minutes off the heat. Remove cover and empty rice onto a try. Add Mirin and Rice Wine Vinegar to taste and cool. Take your rolling mat and place a seafood sheet on top. Add a handful of rice and distribute 1/4 inch thick and evenly spread.

Then add your desired filling and roll, sealing with water. Then cut into your desired sizes and serve with soy sauce, wasabi and picked ginger.

Queen of the Castle!

We had a really lovely time at the St Ives Food Festival. The weekend was the highlight with so much going on.





We held our Tregenna Sand Castle Competition which was a huge success as you can see from the photos. There were some marvellous creations that took a lot of time and effort.


A big thank you goes to I Should Coco, the artisan chocolatiers, who crafted a mouthwatering castle out of their delicious hand made chocolate. What a prize!


















We were pleased to share our sushi secrets to a large audience on the cooking demonstration on the harbour. We''ll upload the recipe shortly for those that missed it.



Finally, it was great to meet so many of you at our stand on the West Pier. Thank you to everyone who came and said hello.

Free Falconry Display Takes Flight



A free falconry display will take place in the stunning grounds of Tregenna Castle Hotel on Wednesday 1st June.

From 6 – 7.30pm, owls, falcons and hawks will show off their breathtaking flight skills around the beautiful estate in St Ives. They will demonstrate the differences between their free flying abilities before a static display then allows visitors to get close to these magnificent birds of prey.

Julian Clement of Countryside Hawking enjoys giving the demonstrations at Tregenna Castle:

“Tregenna offers a very private location so visitors can actually put the glove on and have the birds fly to them. It’s a great experience that everyone can enjoy.”

Tregenna’s 72 acre estate provides a huge variety of woodland walks that are free to enjoy and include the ravine walk recently featured on Inside Out as well as sub tropical gardens.

The hotel’s General Manager, Sheila Barker, encourages the general public to visit:

“To see the birds of prey soar effortlessly above this beautiful estate with its coastal backdrop is timeless. The castle is historic and the nature trail itself was originally created in the 1920s and has recently been restored. The falconry displays really add to the estate’s sense of history and beauty.”

Entry to the falconry displays is free and there are another six sessions planned during July and August.

Tregenna’s hotel facilities are available for non-residents as well as guests throughout the year. This includes the Brasserie where a well earned hot chocolate makes for a perfect treat after the falconry displays.

“Great value, great hotel, revamped rooms, tried very hard to please all guests
I can say that the hotel was recently revamped and the rooms had new bathroom suites and were perfect from what I could see. The food was also excellent and the buffet style of both breakfast and evening was great as you could almost eat as much or little as you liked. I would stay here again and would recommend the Golf course (par 3 course but tricky) and the views from all over the property.

“The most perfect day!”
We have just returned home from our wedding at Tregenna and I have nothing but praise for this hotel. The whole day was beautiful! The staff were fantastic and nothing was too much trouble for our wedding planner Alex. We were married outside and had drinks and canapes on the top lawn. We chose to have a buffet as our wedding breakfast instead of the traditional sit down meal. Everyone commented on how fantastic the food was and how much there was to eat! Great choice and all home cooked. The toast master was excellent too! The whole day was perfect and we wouldn't have changed a thing! Special thanks to the lady on reception on our wedding day for helping us out with the room, flowers and everything else we asked her!We have stayed at this hotel several times over the past two years and wouldn't hesitate to stay here again!

“Excellent weekend break”
Stayed here with my family of six (my wife and I plus four small children under 8) and had a blast. We had a family room which was spacious and accommodated all six of us comfortably. For the price we paid (on a special deal) it gets a 5 star rating.The hotel common areas are clean and modern. I loved the high ceilings and the older furniture. Friendly service all-around (especially that the staff were welcoming of small children), the breakfast was incredible, large room, nice big towels, and the location (views over St. Ives) and grounds are gorgeous.
Definitely would come here again!
